Sloppy Joes with Grilled Carrot and Salad
Recipe from Acme Farms and Kitchen.
For the carrots:
1 bunch carrots, greens trimmed to 1/2″
2 tbsp butter or ghee melted
1/2 tbsp balsamic vinegar
Heat grill to medium
Whisk together butter or olive oil and vinegar. Arrange carrots on the grill and brush butter mixture over the carrots. Grill for 15-20 minutes turning halfway through and applying more of the butter mixture.
When done, pile into a serving plate and brush on the remaining butter mixture.
For the sloppy joes:
1 tbsp oil
1 onion, finely diced
2 green peppers, cored and finely diced
1 tsp minced garlic
salt and pepper
1 lb ground beef
1 15 oz can tomato sauce
1/4 cup ketchup or tomato paste
In a large skillet, heat oil over medium high heat and add onion, bell pepper and garlic. Season with salt and pepper. Cook stirring frequently until vegetables are softened, 5 to 7 minutes.
Add ground beef to skillet and season with salt. Cook, breaking up meat with a wooden spoon, until it is no longer pink, 6 to 8 minutes.
Stir in the tomato sauce and ketchup or tomato paste into beef mixture in skillet. Simmer until thickened, 6 to 8 minutes. Taste and adjust seasoning as desired. Serve in lettuce leaves or with just a green salad on the side.
