Quick Afternoon Salad Break

This weekend after running errands for a few hours I came home starving. Since we had been to the grocery store, I threw together a quick afternoon salad for a snack as we were having a late dinner with friends on Sunday night.

Here is a quick rundown of what I made. Both Mark and I ate it in less than 5 minutes and it kept us satisfied till dinner.

Ingredients:

– Rocket (Arugula)

– Trader Joe’s Sharp Cheddar Cheese. It taste most like English cheese and almost has bits of Parmesan in it.

– Balsamic Glaze

– Olive Oil

– Greek Olives

– GF Croutons (we picked these up at the Ballard Farmer’s Market. They are from NuFlours)

Preparation:

Put everything into a large bowl and mix up to make sure that the Balsamic Glaze and Olive Oil are well combined. Combine onto 2 plates and enjoy.
