Saturday Breakfast

On Saturday morning I woke up wanting to eat one thing, avocado toast with bacon. I have seen variations of avocado on toast all around the internet, but had yet to try it. We had one very ripe avocado in our fridge and 4 pieces of the Uncured Maple Bacon from Trader Joe’s so I set about constructing our breakfast.

Ingredients:

– 1 Avocado

– Bacon

– Gluten Free Bread (toasted)

– Juice of 1/2 lime

– Salt and Pepper

– Feta Cheese

Preparation:

Preheat oven to 400 degrees. Once pre-heated cook bacon for about 15 minutes flipping every few minutes to evenly cook. At the same time as the bacon is cooking, slice and mash up one ripe avocado. Add juice of 1/2 lime and add salt and pepper. Toast your bread. Add the avocado spread on top. Sprinkle crumbled feta cheese on top of avocado spread and top with the crispy bacon. This was so delicious and kept me full for hours.
